Wheat Thins
4 cups whole wheat flour (grind your own for more taste & better nutrition)
2 tsp salt
1 tsp baking soda
1 cup buttermilk or milk
2 eggs
or
3 cups rolled oats
3 cups whole wheat flour
3tbs maple sugar or honey
1 tsp salt
3/4 c oil
1 cup water
mix all together and roll out thin, cut, poke with fork bake on cookie sheet at 350 about 20 mins
Green Pork Chili

1 1/2 lb tomatillos
1 tbs Knorrs chicken bullion
3 tbs oilve oil
5 lbs boneless country style pork ribs (or any big hunk o'pork) cut in smallish pieces
salt & pepper
3 cans diced green chiles (or your favorite chared chileschopped)
1 tbs oregano
1 1/2 large onion chopped
7 cloves crushed garlic (or just go with the whole bulb)
3 jalapeno peppers chopped
1/2 cup chopped cilantro (I just go with one bunch)
shredded cheddar & lime wedges for serving
Simmer the tomatillo in water until soft (20 mins) add the chicken bullion & stick blend or put in blender. While that is going on season pork with salt & pepper and in small batches brown the pieces moving them to a seperate plate as they brown (6 - 8 mins per batch)
Into your crock pot (or you can continue cooking with your dutch over/cast iron pot) place the tomatillos, pork, chiles, oregano, onion, garlic, jalapeno peppers, cilantro cover & let simmer for 3-4 hours.
Serve over rice or plain with cheddar cheese and limes squeezed on top & garnish with cliantro leaves.
This is really good wrapped in a tortilla too.
This cooks well in a dutch oven...if you don't have one you can get one here
Cast Iron Dutch Oven - 12 Qt.
Calico Beans
1 lb bacon
1 lb hamburger
1 large onion
1 can pork & beans
1 can red beans
1 can black beans
1 can pinto beans
1 can ranch beans
1 cup brown sugar
1/2 cup apple cider vinegar
1/2 cup katsup
1 tsp garlic powder
salt & pepper to taste
Slice bacon and brown in pan, remove bacon but leave grease. Brown hamburger in bacon grease & add onion at the end of hamburger browning. Put bacon, hamburger, onion and all of the rest of the ingredients into crock pot...simmer for 3-4 hours. Serve with tortilla chips.
Liz's Really Yummy Chocolate Cake
1 3/4 cup flour
2 cups sugar
3/4 cups cocoa powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup oil
2 tsp vanilla
1 cup boiling water
combine dry ingredients. Add egg, milk, oil and vanilla. Beat 2 minutes at speed. Stir in boiling water. Pour into greased 13x9 pan and bake at 350 degrees for 35-40 minutes.
A trick for getting your cakes to turn out of cake pans:
Grease the bottom of the pan and then put either parchment paper or tin foil on the bottom (cut to fit bottom), grease the paper or foil dust with flour or sugar and then put your batter in. When the cake has cooled run a knife around the edges, cover the top with the serving platter, invert cake out, peel off paper or foil.
